While these models do have athletic bodies, I doubt that many of them are known sports figures.
What you are looking for are called low key artistic nudes or fine art nudes (still low key … as in the lighting style)
I doubt that there is a coffee table book of such images.
You may want to shoot them yourself and make your own book. Now days you can self-publish one book or 10,000
